Very simple and a showstopper
Fresh tuna steaks (10 oz)
Marinade:
1/2 cup honey
1/2 cup soy sauce
4 cloves garlic (minced fine)
Hot sauce (gouchujang is good)
Sesame seeds
Charcoal chimney starter filled with hot coals and a grill rack placed on top is optimal but can be done under a broiler.
Combine marinade ingredients well then pour over the tuna steaks. Let sit in the refridgerator for a half hour or so.
Prepare the chimney starter with coals, place a grill over the top of the chimney starter to get really hot.
Pour a good layer of sesame seeds onto a wide plate.
Remove the tuna steaks and shake off the marinade then press each side onto the sesame seeds to coat well.
Heat broiler to as hot as you can get it if you don’t have a chimney starter.
Place tuna over coals (under broiler) and cook for around 1 minute per side, the middle should be pretty uncooked but cook it to how you like.
Serve.
