Quick Chicken Shwarma

Quick, light, healthy, delicious. What more could you ask for?

Make the sauce:

1 cup plain Greek yogurt
1-2 cloves of garlic, finely minced or smeared into a paste
1 tsp lemon or lime juice
A bit of diced cucumber
Sprinkle of cumin
salt and pepper

Combine ingredients and place in the fridge for 30 minutes to 3 days.

Prep sandwich fixins.
Pita Bread sliced in half so a pocket is formed.
Cucumber, peeled, cut in half lengthwise, and cut into thin half moons.
Tomato sliced thin.
Red onion sliced thin.
Sautee’d onion
Hummus
Crumbled feta
(Or basically anything you want.)

The shwarma

Shred some rotisserie chicken. Heat olive or avocado oil in a skillet. Sprinkle in 1 T either shwarma spice blend or zatar. Cook for a minute or so until you can smell the toasted spice. Add shredded chicken. Toss while heating until the spice coats the chicken. Heat a griddle or larger skillet over medium high heat.

To serve:
Put chicken into pita half and top with sauce and hummus if desired. Place sandwich onto hot griddle and press down. Repeat on other side until grilled.
Fill with whatever fixins you desire.
Consume.
Great with either a small Greek salad or french fries.
