This is exotic, easy, and delicious.
Whole semi-hot peppers (Hungarian, Shishito, Anaheim, etc…
One medium onion
Two large ripe tomatoes
Pepper flakes (optional)
2 or 3 eggs
Good bread
Either dice or make long slices of pepper and onion (some consider onion heretical but our guide in Istanbul said his family used them) and soften in a good bit of olive oil. I also add garlic, which is also heretical.
Grate the pulp from a couple of tomatoes and add pulp and liquid. Stir and cook a bit until everything cooks together. Taste. Add S&P or, if you want a little more heat, add pepper flakes.
Take a couple or three eggs and break them into the mixture. Stir the eggs around and let cook but still be a bit runny and soft.
Serve with warm bread.
