Low Carb Cottage Cheese Pizza Crust/Flatbread

It works and it’s great whether you are on keto or not

Ingredients
1/2 cup cottage cheese
2 eggs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
dried oregano
Optional: Everything But The Bagel spice mix


For pizza
1/4 cup pizza sauce
1/2 cup shredded mozzarella cheese or as per taste
1/4 teaspoon crushed red pepper flakes or as per taste
Toppings of your choice

Preheat the oven Set your oven to 350ºF and while it preheats, start on the cottage cheese flatbread.

In a blender, add the cottage cheese, eggs, garlic powder and onion powder. Blend till smooth.
Line a quarter sheet pan with parchment paper and lightly spray it with some cooking spray and then pour the mixture and spread it out evenly. Sprinkle on the oregano (and spice mix if you wish) and bake for 30-40 minutes.

Once ready, add pizza sauce, mozzarella cheese, and toppings. Pop back in the oven for 5 minutes till the cheese melts.
Enjoy immediately.

Note this makes a fairly sturdy crust. If you wish, just add the egg whites and this will make a more pliable crust which is great for folded sandwiches.
