1 pound of firm fish white fish
1/2 tsp paprika, onion powder, garlic powder, salt.
4 cloves garlic, minced
2 Tblsp butter
2 Tblsp chopped parsley
Seasoning Mix.
Combine paprika, onion powder, garlic powder, and salt in a small bowl.
Take garlic and put in a small pan with butter and minced parsley.
Put over a low flame until butter melts and garlic mellows out. Or you can put them in a microwave safe dish and zap for 2 minutes.
Season both sides of the fish with the powder and let sit for 5 minutes to let it adhere a bit. Then put on an oiled hot grill.
Cook for 7 minutes or so and carefully flip. Brush with the melted garlic butter. Cook another 5 to 7 minutes, until it is still moist but beginning to flake as you gently pull it apart. Remove from grill and plate. If you want, drizzle a bit of olive oil on it before serving.
It was so good.
I served this with the grilled peaches with burrata and balsamic glaze, sweet potatoes cooked at 425F for about an hour so they got really soft and sweet, and stir-fried bok choy with mushrooms.
