Grilled Chicken Pita Sandwiches

A great Summer treat

1 skinless boneless chicken breast or 3 skinless boneless chicken thighs
1/4 cup olive oil
2T minced garlic
1 T fresh lemon juice
1/4 cup plain yogurt
1 tsp fresh or dried oregano
1 tsp salt
1 tsp pepper

Serve with:
Pita bread
Sliced tomatoes
Sliced cucumber
Lettuce
Thin sliced red onion (pickled if you wish)
Tzatziki Sauce
or
Rice and grilled vegetables

Either cut chicken breast through the middle to make two thin steaks or pound to about 1/4 – 1/2 inch thick. Slice the thighs into long strips.
Combine the rest of the ingredients then toss everything into a ziplock bag and let marinate for at least 30 minutes and overnight is best. The longer it sits, the more flavor it has.

Prepare your grill, either charcoal or gas, to medium heat. Remove the chicken from the marinated and wipe off.
Add the chicken to the grill and cook through. It won’t take very long so keep an eye on it.
Remove and serve either as sandwiches or as a main dish with grilled vegetables over rice.
