One of my favorite sides at chicken joint Popeyes is their Red Beans and Rice. This is a pretty close version.
2 cans of red beans drained and rinsed
1 1/2 Tbls butter
1/2 tsp garlic salt
1/8-1/4 tsp liquid smoke flavoring
1/4 tsp onion powder
1 1/2 Cups water
salt and pepper to taste
( I also added a little bit of Louisiana Hot Sauce)
Combine ingredients in a sauce pan, bring to boil.
Stir constantly and mash some of the beans with a potato masher or spoon.
Cook for about 20 Minutes, until the broth has thickened.
Serve over or under cooked rice
