A great presentation and delicious. Looks fancy but really easy. The orange sauce makes it super special.
2 fish filets. Any firm fish will do, salmon, cod, branzino, talapia, whatever
1 russet potato, peeled
1T butter, melted
1 tsp potato starch
1/2 cup orange juice, fresh squeezed is best
Slice the potato very thin. A mandoline is perfect for this. If you don’t have one, a sharp knife will work.
Cut slices into rounds resembling scales. Can be half circles.
Melt butter and add potato starch.
Blanch potatoes for 1-2 minutes then toss in the butter mixture.
Brush fish with butter mix the layer potatoes over one side. Pan fry until brown, flip and cook another minute.
Reduce orange juice mixed with butter to a sauce.
Serve with fish.
